The driving forces behind restaurant Seven Seas

The Chef Paul Dingjan and his brigade developed a unique menu that guarantees much variety and culinary surprises. Paul as head of kitchen leads  his brigade to an even higher level using his novel cooking skills. This professional has abundant culinary experience in the Dutch and French cuisine and worked as Sous-chef of cuisine at Brasserie Flo in Amsterdam. “The dishes we prepare in the Seven Seas are inspired by the Mediterranean” he says. ‘’We have a magnificent menu that changes every season’’. Meat and Fish lovers can always find what they are looking for and there are a variety of items that vegetarians can choose from. ‘’Together with my team I am constantly working on the refinement of flavor’. We always make use of all natural and honest ingredients.’’

Els Hesseling is the restaurant manager of the Seven Seas. In her position she is also responsible for a smooth progression of all banqueting parties taking place in The Grand Hotel Amrâth Amsterdam. Els is an experienced hostess and after finishing her schooling Hospitality Management she worked as restaurant manager of Open Golf Zandvoort and restaurant manager of  Ludic in Haarlem. ‘’Personal service and perfection are two things that I find most important.’’  ‘’Together with our sommelier we search over the entire world looking for nice wine to accompany our dishes.’’

Next to the à la carte restaurant Paul and Els are also responsible for preparing breakfast and the dishes for our business guests and wedding guests. The lunch is served in the bar/lounge, a cosy and less informal location where guests feel comfortable. For special occasions there is the possibility to dine in one of our venues and a menu will be prepared according to the special wishes of the guest. Paul and Els together with their team will ensure an unforgettable experience in the beautiful ambiance of the monumental Shipping House.
